Resolution

This is a known issue with Exchange 2010 and I have seen it in all service packs and updates. The error is due to exchange for some reason not seeing a global catalogue server correctley.

A work around is is to force your exchange server manually to look at your global catalogue server.

1) open up powershell and enter the following

After Preferred server enter the FQDN of a domain controller. Restart all exchange services or reboot then try and mount the store. You should then be able to mount your store.
Then I normally restart the Microsft Exchange toplogy services which will also restart all the exchange services. Then finally launch the exchange 2010 console and you will be able to mount your new exchange 2010 mailbox stores.
